Hey babes! Happy Wednesday! Today I am sharing a blueberry pancake bite recipe. I made them last week and they are to die for! They may not be the healthiest, but they sure are delicious!!
- 2 cups pancake mix
- 1 1/3 cups water (adjust as needed)
- 1 cup blueberries
- 1 tbsp. maple syrup
- 1/2 tsp. vanilla
Preheat oven to 350. Lightly grease 12 count muffin pan and set aside. In a mixing bowl stir pancake mix, water, syrup, and vanilla. Gently fold in blueberries and pour pancake batter evenly into the muffin pan. Bake for 15-20 minutes (or until the tops/edges are golden).
You can eat them plain, dip them in syrup, or heat them up in the microwave. Perfect to grab and go in the mornings!
